SWEET & SOUR WHEAT SALAD image

250g whole wheat grains
100-200ml sunflower oil, for frying
2 small aubergines, cut in 1.5cm dice
50g dried sour cherries
½ green chilli, finely chopped
2 tbsp chopped coriander
2 tbsp chopped dill
4 tbsp chopped mint
2 tbsp rapeseed oil
1 tbsp red-wine vinegar
Salt and black pepper

Steps:

  • Wash the wheat, put it in a medium pan and cover with plenty of water. Bring to a boil, simmer until tender, tip into a sieve, wash with plenty of cold water to remove the starch, then set aside to drain and dry. Meanwhile, heat the frying oil in a medium pan and fry the aubergine in batches - each should take about five minutes to turn golden brown. Transfer to a colander, sprinkle with salt and leave to drain and cool. Once cool, put all the ingredients into a bowl and stir gently. Adjust the seasoning to taste - it will probably need quite a lot of salt - and serve
