Steps:
- Heat oven to 350*. In a large bowl, combine 1/4C oil, honey, 1/2 juice, large pinch of salt and pepper to taste and toss with potatoes. Spread in an even layer on rimmed baking sheet, bake until tender and lightly browned in spots (45-55 minutes).
- In food processor, pulse to combine 1/3C oil, cilantro, chiles, garlic, almonds, remaining juice, vinegar and large pinch of salt until chunky purée forms.
