SWEET POTATO & LENTIL SOUP image

Yield 1 large pot

Number Of Ingredients 14

1tbsp olive oil
2 cups dry green lentils, soaked in advance for 2-3 hours
1 large sweet potato, cubed
1 large onion, chopped
3 tsp grated ginger
4 cloves garlic, minced
1 large can chopped tomatoes
6-8 cups of veggie stock or water
2 tsp ground cumin
2 tsp ground coriander
2 tsp ground thyme
1 tsp curry powder
2 tsp salt
dash cayenne

Steps:

  • Heat the olive oil over medium low heat in a large soup pot. Add the chopped onions, and saute. While your onions are cooking, you can grate the ginger directly into the pot and let them cook together. Once your onions are translucent, add the cumin, coriander, thyme, curry powder, cayenne, and salt. Saute for 1 minute, then add the can of tomatoes (including the liquid). Stir well, making sure to get all the good stuff off the bottom of your pot. Add the sweet potatoes and enough stock to cover them. Turn heat to high, bring to a boil, then reduce the heat to medium and simmer covered until sweet potatoes can be pierced with a fork (or until they're about 3/4 of the way cooked). Drain and rinse the lentils, then add them to the pot along with the garlic. At this point you'll probably need to add a few more cups of stock for the lentils to absorb. Allow to simmer until the lentils and sweet potatoes are fully cooked (about 10-15 minutes). Check every 5-10 minutes during this stage to ensure there's enough liquid. This soup can be served immediately, or it can simmer indefinitely. The lentils and sweet potatoes will get quite soft if you wait to serve it, but it still tastes great. Enjoy!
