SWEET POTATO LATKES (BAKED) image

1 pound (approx 1 large) sweet potato
1/2 cup spelt flour
1 tsp unpacked brown sugar
2 tsp white sugar
1 tsp baking powder
1/4 tsp (or more, to taste) cayenne pepper
2 tsp curry powder
1 tsp Cumin seeds
1/4 tsp black pepper
1 tsp table salt
2 eggs, lightly beaten
1/4 cup skim milk

Steps:

  • Preheat oven to 400. Spray two cookie sheets with oil. Peel and grate the sweet potatoes coarsely. In a separate bowl, mix the flour, sugars, baking powder, cayenne, curry powder, cumin, salt and pepper. Ad the eggs and just enough milk to the dry ingredients to make a stiff batter. Add the potatoes and mix. The batter should be moist but not runny. If too stiff, add milk. Drop batter by tablespoons onto the cookie sheets, spacing them a few inches apart, and flatten. Bake for 20 minutes, until bottoms start to brown. Spray tops of latkes with cooking spray, then flip and bake another 15 minutes or so.
