Steps:
- Preheat oven to 400. Spray two cookie sheets with oil. Peel and grate the sweet potatoes coarsely. In a separate bowl, mix the flour, sugars, baking powder, cayenne, curry powder, cumin, salt and pepper. Ad the eggs and just enough milk to the dry ingredients to make a stiff batter. Add the potatoes and mix. The batter should be moist but not runny. If too stiff, add milk. Drop batter by tablespoons onto the cookie sheets, spacing them a few inches apart, and flatten. Bake for 20 minutes, until bottoms start to brown. Spray tops of latkes with cooking spray, then flip and bake another 15 minutes or so.
