Sweet Potato Casserole With Pecan and Coconut Topping image

This is my MIL's recipe. It's great. I am constantly asked for the recipe so I thought I would post it on Zaar so everyone can enjoy it!

Number Of Ingredients 11

4 sweet potatoes
1 cup sugar
1/3 cup butter
2 beaten eggs
1 teaspoon vanilla
1/2 cup milk
1 cup coconut
1 cup pecans
1 cup brown sugar
1/3 cup flour
1/3 cup butter

Steps:

  • Skin, mash and boil potatoes. Let cool. Mix cooled mashed potatoes with sugar, butter, eggs, vanilla, and milk until well blended. Put in 2 1/2 quart baking dish.
  • Mix all topping ingredients in seperate bowl until mixture resembles crumbs. Put over potato mixture. Bake casserole in 375 degree oven for 20 minutes. Enjoy!
