I found this recipe a while ago. Originally, it used jalapenos or red chili peppers. I tried it again with chipotle peppers. That's the ticket. You can try many variations on this sauce: - Use honey or molasses in place of the brown sugar - Try different type of vinegar - Use more or less chipotles for a different heat level - Try replacing half the onion with diced sweet red peppers You can store the excess sauce for several weeks in the refrigerator or freeze for later use. Steps:
- Heat 2 tablespoons of oil in a saucepan over medium-high heat
- Saute the onion and garlic until translucent, about 3-6 minutes
- Place all remaining ingredients into a saucepan and simmer gently for 20-30 minutes
- Place in a blender or using an immersion blender (boat motor) and blend the sauce until smooth
- Continue simmering until it is the consistency you desire, about another 5-15.
