Sweet and Sour Red Cabbage with Apples image

This is good with ham and it can be made several days before it is needed. Don't forget to have a chug of the wines while preparing cabbage. LOL

Number Of Ingredients 8

3 Tbsp unsalted butter
1 large (2#) head red cabbage...cored and shredded
4 apples (such as mcintosh,or empire,cored and thinly sliced
1/2 tsp salt
1/2 c packed brown sugar
1/2 c red wine vinegar
2/3 c red currant jelly
1/2 c sweet wine,such as port+more if needed

Steps:

  • 1. In a dutch oven or other large heavy bottomed saucepan with a cover,melt the butter over medium heat and stir in the cabbage and apples. Stir in the salt,brown sugar,and vinegar. Add the jelly and wine. Bring to the boiling point,then cover,lower the heat,and simmer for 20 minutes. Stir occasionally and add more wine if the mixture seems too dry.
  • 2. If not serving immediately,let cool,and refrigerate for up to 2 days.
