Sweet and Moist Banana Muffins image

These sweet and moist banana muffins are not only delicious, they're full of some healthy ingredients to curb the not so healthy ones!! Everytime I make these, people love them. They're moist, sweet and hearty. I usually eat them for breakfast or as a snack!! Enjoy!!

Number Of Ingredients 16

4 ripe bananas
1 cup whole wheat flour
1/2 cup unbleached flour
2 tablespoons wheat germ
1/4 cup oat bran
1/2 cup sugar
1 egg
1 egg white
1/3 cup melted butter or 1/3 cup margarine
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon cinnamon
1/2-1 teaspoon orange peel
1/4 teaspoon nutmeg
1 tablespoon vanilla extract

Steps:

  • Heat Oven to 350 degrees.
  • 1. In a bowl, mash together banana, melted butter, sugar and eggs.
  • 2. Add in the vanilla extract, cinnamon, nutmeg, orange peel.
  • 3.In a separate bowl, mix together flour, baking soda, baking powder, salt, oat bran and wheat germ.
  • 4. Add wet ingredients to the dry ingredients and mix well.
  • 5. Make sure to spray your muffin pan with nonstick spray.
  • 6. Fill the muffin tray and bake for 20 minutes or golden.
