Sumptuous Low Fat Chicken Almondine image

This dish explodes with flavor and elegance while at the same time lower in fat than the original dish making perfect to serve for that fancy meal and still quick and easy enough to serve any day of the week.

6 (4oz) boneless skinless chicken breasts or chicken tenders
2 pkg buddig pastrami
6 slice turkey bacon
1 can(s) reduced fat cream of mushroom soup
1/2 c fat free sour cream
2 clove garlic minced
1/2 tsp salt
1/4 tsp course ground black pepper
1 tsp adobo seasoning mix
toasted almonds

Steps:

  • 1. Pre heat oven to 350 degrees with oven rack set in the center of oven.
  • 2. Spray 7x11 inch baking dish.
  • 3. Tear pastrami into pieces and place in the bottom of baking dish.
  • 4. Wrap each piece of chicken in bacon and place over pastrami in pan.
  • 5. Mix together Cream of mushroom soup, garlic, and spices until well mixes and spoon over chicken pieces.
  • 6. Sprinkle with Toasted almonds.
  • 7. Bake 1 hour or until chicken reaches 165 degrees on an oven thermometer.
