Sugar Free Meatloaf image

I was having trouble finding a meatloaf recipe that fits into my no white sugar/no white flour diet, so I made one up. I adapted it from the "Netivot HaTorah Gatherings" cookbook recipe for "Turkey Meatloaf with Cranberry Glaze". My husband though it was funny that I was using the recipe but wasn't making anything in the title. You can obviously substitute turkey for the beef, and of course you can use regular matza meal or bread crumbs instead of whole wheat.

Number Of Ingredients 10

2 lbs ground beef
3/4 cup whole wheat matzo
4 eggs
1/8 teaspoon pepper
1 teaspoon onion powder
1 teaspoon garlic powder
2 tablespoons soy sauce
8 ounces Hunts tomato sauce
2 tablespoons soy sauce
1 tablespoon honey

Steps:

  • Preheat oven to 350 F or 180°C In a large bowl mix the first 7 ingredients together with your hands until combined. Form meat mixture into oval (American football shape) or flatten into 9x13 pan. In a separate bowl, mix glaze and pour over meat. Try to make sure the glaze stays on the meat as much as possible if in football shape. Bake for an hour.
