SUGAR FREE COCONUT CREME PIE image

I love Coconut Creme Pie but being a diabetic, I knew my pie eating days were over. Then I thought about it and I came up with my own Coconut Creme Pie......15 carbs to a slice

Number Of Ingredients 6

2 box sugar free vanilla instant pudding
milk, 2%
1 tsp coconut extract
2 c frozen coconut (thawed)
1 pkg regular frozen pie shell
1 tube(s) sugar free cool whip

Steps:

  • 1. Bake pie crust at 350 for 15 minutes. Let cool completely.
  • 2. Make pudding on box as directed for both boxes of pudding. Add coconut extract and 1/2 cup of thawed coconut. Mix well
  • 3. Immediately pour into cooled pie crust. Top with cool whip and remaining coconut.
