Stuffed Portabella Mushrooms image

This makes a simple, but elegant meal when served with a tossed salad. It is a great way to use that little bit of leftover pasta and sauce. It is easy to double the recipe.

Number Of Ingredients 4

2 large portabella mushrooms
2 c cooked pasta, divided
1/2 c jarred pasta sauce or your favorite homemade
4 Tbsp grated parmesan

Steps:

  • 1. Remove gills and stems from mushrooms. Place on a foil-lined baking sheet. I also make a foil collar for each mushroom (It helps me keep the rest of the ingredients in place)
  • 2. Bake for 12 minutes. remove from oven.
  • 3. Place 3/4 to 1 cup of pasta on each cap.
  • 4. Smother with pasta sauce.
  • 5. Sprinkle with parmesan.
  • 6. Return to oven for 7 minutes or until heated through and parm is golden brown. Serve.
