STUFFED FILLETS OF SOLE image

4 nice white fish fillets
fresh spinach leaves
2 c breadcrumbs
1 can crab meat, drained
2 T minced shallots
2 T butter
1/2 c white wine
1/2 c chicken broth

Steps:

  • Saute shallots in butter. Add 1/2 of the wine and butter and cook 1 minute. Remove from heat. Add crab, S & P to taste. Toss in a bowl with the breadcrumbs. Lay fish flat, top with a spinach leaf and about 1/4 c of crab mixture then roll up. Place in a greased casserole dish, pour other half of wine/broth over top. 350 x 10 - 12 min. Serve with hollandaise and a lemon wedge.
