STUFFED ENDIVE LEAVES WITH MANGO image

Number Of Ingredients 4

1 3-ounce package cream cheese, softened
1/4 cup coarsely chopped nuts of choice -- consider macadamias; pecans; walnuts, etc.
2 to 3 medium heads Belgian endive, separated into individual leaves
1 large mango or papaya, cut into thin strips

Steps:

  • (Start to Finish: 20 minutes) 1) In a small bowl combine the cream cheese and macadamia nuts. 2) Spread about 1 teaspoon of the cream cheese mixture onto each endive leaf. 3) Top with the mango strips. Arrange on a serving platter. Make-Ahead Directions: Prepare as above through step 2. Loosely cover with plastic wrap; chill for up to 2 hours. Before serving, top with mango strips.
