Stuffed Center-cut Pork Loin Chops image

a healthy way to enjoy lean pork

Number Of Ingredients 17

2 lb pork loin chops (4-6 chops, 2" thick)
1 large jalapenos, fresh (seeded, deveined, finely chopped)
1/2 medium onion, finely chopped
3-4 clove garlic, finely chopped
1 Tbsp parsley, (fresh chopped)
1/2 tsp rosemary, fresh (finely chopped)
1 tsp oregano, dried
4 small limes
2 oz tequila
1 tsp paprika, sweet mild
1 tsp cayenne pepper
1/2 tsp cumin
2 Tbsp salt and pepper
vegetable oil
1/2 box spinach, frozen (finely chopped)
2 Tbsp feta cheese
2-3 sundried tomatoes, finely chopped

Steps:

  • 1. In a bowl combine jalapenos, onion, garlic, parsley, rosemary, oregano, juice of two limes, and tequila. Set aside, this is your marinade.
  • 2. In another bowl combine paprika, cayenne, cumin, salt & pepper. Set aside, this is your spice rub.
  • 3. In another bowl combine spinach, feta, and sun-dried tomatoes. Set aside, this is your stuffing.
  • 4. Take pork chops and create a pocket on the side being careful not to cut all the way through. Rub vegetable oil all over chops until coated.
  • 5. Season both sides of chops with paprika rub.
  • 6. Next, stuff chops with spinach/cheese filling. If needed, hold seal together with skewers or tie butchers twine around chop. Don't worry about filling falling out.
  • 7. Next, lay chops out in a pan and liberally spoon herb/tequila marinade over chops. Marinade in fridge for at least an hour, preferably over night.
  • 8. On a gas grill on medium hi heat, sear both side of the chops at 4 minutes a side. Lower the heat to medium low for an additional 4 minutes on each side. Take chops off the grill and let rest covered for 5 minutes. Before serving, squeeze fresh limes over chops. Enjoy!
