Steps:
- Heat grill to medium heat.
- Mix first 3 ingredients just until blended; shape into 8 (1/4-inch-thick) patties. Spoon 1 Tbsp. blue cheese onto center of each of 4 patties. Top with remaining patties; pinch edges together to seal.
- Brush onion slices with dressing. Grill patties and onions 5 to 6 min. on each side or until patties are done (160°F).
- Mix mayo and remaining blue cheese; spread onto cut surfaces of buns. Fill buns with burgers, onions, spinach and bacon.
