String Bean and Linguica Soup image

From an old Boston Globe article, dated Feb.27, 1985: Gaspar's is a sausage success story. Simple recipes using spicy linguica. Try it and let me know if you liked it, and if you tweaked the recipe.

Number Of Ingredients 9

1 small onion, chopped
1/2 green pepper, diced
1 Tbsp butter or margarine
2 potatoes, peeled and diced
1/2 lb linguica, cut into bite-sized pieces
1 lb string beans, cut into bite-sized pieces
1/2 tsp ground allspice
salt and pepper to taste
1 can(s) 8 oz. tomato sauce

Steps:

  • 1. Saute onion and green pepper in butter until onions are tender. Place onion and pepper in pot with potatoes, linguica and beans. Add enough water to cover. Add allspice,salt and pepper. Stir in tomato sauce. Cover and simmer until beans are tender, about 1 hour.
