STRAWBERRY, KIWI AND ORANGE SALAD image

Number Of Ingredients 9

l l/2 cups fresh orange juice (5 oranges)
l/3 cup fresh lemon juice
l/4 cup sugar
2 tsps. arrowroot
2 tbls. orange liqueur
4 navel oranges
4 kiwis, peeled and cut lengthwise into eighths
5 pints of ripe strawberries, halved if large
fresh mint sprigs for garnish

Steps:

  • In a small nonreactive saucepan, combine the orange juice, lemon juice and sugar and bring to boil. Reduce the heat to low and simmer until reduced to l l/3 cups, about 10 min. Dilute the arrowroot in l tbls. cold water. Stir into the syrup and return to a boil, stirring. Remove from heat and let cool. Stir in the orange liqueur. Cover and refrigerate for 2 hrs. Using a sharp knife, peel the oranges, removing all the white pith. Cut in sections. Toss the fruit with dressing up to 2 hours before serving. Garnish with mint.
