Steps:
- 1. Grease and flour three 9 inch round pans, set aside. In a large bowl, cream butter and sugar until light and fluffy.
- 2. Add egg whites, one at a time, beating well after each addition.
- 3. Beat in the strawberries, sour cream and extract.
- 4. Combine the flour, baking powder, baking soda and salt.
- 5. Add to the creamed mixture.
- 6. Transfer batter to prepared pans.
- 7. Bake at 350 for 20 to 25 minutes or until toothpick inserted near the center comes out clean. Cool before removing from pan to wire rack to cool completely.
- 8. Frosting: Beat cream cheese and butter until fluffy and add the confectioners sugar, strawberries and extract; beat until smooth. Place bottom cake layer on your serving plate; top with jam and then frosting, repeat layers.
- 9. If you choose, garnish with sliced strawberries.
