Strawberry Cake Mix Cookies image

These little cookies are packed with lots of flavor. Plus there so easy to make as well. (When choosing a cake mix to prepare these cookies, I chose one that "does not" have pudding in the mix.)

1 (15.25) ounce(s) box strawberry cake mix
1/3 cup(s) vegetable oil
2 eggs

Steps:

  • Preheat the oven to 350°F.
  • Prepare a baking sheet by lining it with parchment paper. (I lined 3 cookie sheets with parchment paper.) Set baking sheets aside.
  • In a large bowl, add the strawberry cake mix, vegetable oil and eggs.
  • Using an electric mixer on low speed, combine the strawberry cake mix, vegetable oil, and eggs. (I increased the speed of the electric mixer just a bit after a few seconds, in order to combine the ingredients.)
  • Use a small cookie scoop, to measure the batter, place the cookie batter evenly spaced apart on the prepared baking sheets. (I spaced the cookie batter about 2-1/2 inches apart. I also topped some of the cookie batter with colorful rainbow jimmies)
  • Place baking sheet in the oven and bake for 8 minutes; until the edges begin to turn brown.
  • Remove cookies from the oven and place them on a cooling rack to cool completely.
