Steps:
- 1. Combine flour, sugar, bicarbonate of soda and breadcrumbs in a large bowl and mix well. 2. Add in the dried & glace fruits and orange zest. Mix well. 3. Mix the melted butter, eggs, mashed banana and wine together. Pour over suit mixture and mix well. 4. Pour pudding mixture into a greased pudding basin. Cover with a layer of greaseproof paper and aluminium foil and tie securely. 5. Place pudding basin into a deep saucepan and fill till 3/4 way with hot water. 6. Bring water to boil then simmer pudding for about 4 hours. 7. When cooked, remove from saucepan and left to cool completely before storing in fridge for about 3 weeks before serving. 8. To serve, remove pudding from pan. Microwave for about 2 minutes to heat up pudding. Serve with brandy custard sauce.
