STEAK WITH BUTTER & GINGER SAUCE image

1.5 to 2 lbs. boneless rib-eye or sirloin steaks, about 1 inch thick
3 tablespoons butter
2 tablespoons minced ginger
2 tablespoons soy sauce

Steps:

  • Preheat large heavy skillet over med-high heat till it begins to smoke. Add the steaks and cook till nicely browned, 1 to 2 min. Turn and brown the other side, another min. or 2. Remove the skillet from heat and transfer steaks to plate. When skillet has cooled slightly, return to stove over med heat. Add butter and when it melts, the ginger. About 30 seconds later, add the soy sauce and 2 tablespoons water and stir to blend. Return steaks to skillet, along with any accumulated juices. Turn heat to med. And cook steaks for a total of about 4 min. more, turning 3 or 4 times. (If at any time the pan threatens to dry out entirely, add another couple tablespoons of water.) At this point, the steaks will be med-rare. Serve with pan juices spooned over.
