SPRING SPINACH SALAD image

Yield 8-10 servings

Number Of Ingredients 11

1/2 c vegetable oil
2-3 T sugar
2-3 T white wine vinegar
1 T poppy seeds
1 T lemon juice
1/2 t salt
1/2 t ground mustard
10 c torn spinach
2 c sliced fresh strawberries
1 c chopped pecans, toasted
1/2 c chopped Vidalia or sweet onion

Steps:

  • In a jar with a tight-fitting lid, combine the first 7 ingredients; shake well. Just before serving, combine spinach, strawberries, pecans and onion in a large salad bowl. Add dressing and toss to coat.
