SPINACH SOUP image

Number Of Ingredients 9

1/4 cup of chopped onion
1/2 garlic clove, minced
1 TB butter or margarine
1 can ck broth 46 oz.
1/2 cup acini pepe uncooked
1/4 tspoon nutmeg (optional)
1/8 tspoon pepper
1 pkg (10 oz) frozen chopped spinach
Grated Parmesan Cheese (optional)

Steps:

  • Cook and stir onion and garlic in hot butter until tender but not browned. Add chicken broth and bring to a boil. Add pasta nutmeg and pepper: simmer about 5 minutes. Add chopped spinach and simmer 5 minutes stirring occasonialy. Season to taste with salt, if desired. Sprinkle with cheese. Makes 6 1/2 cups or 8 servings.
