SPINACH RICE BALLS image

Yield 16-18 balls

1 cup brown rice, uncooked*
1.5 cups of water*
2 tablespoon lemon juice
dill weed, to taste
1 clove minced garlic (or to taste)
1 teaspoon cayenne pepper
1 package frozen chopped spinach, thawed
1/2 cup bread crumbs
10 ounce shredded cheddar cheese
2 tablespoons olive oil

Steps:

  • Pre-heat oven to 350 degrees F. Boil rice in water. Use slightly less water than recommended to make 2 cups cooked rice, so that rice is slightly dry. Rice that is too soft will not bake properly later. In a large bowl, combine spices (cayenne, garlic, dill weed, lemon juice), stir throughly. Add spinach, crumbs, and cheese to bowl. Stir again. Add boiled rice and olive oil to mixture when finished. Mix thoroughly. Prepare cookie sheet with tin foil and non-stick spray of choice. Shape mixture from bowl into 2-inch balls, and place evenly on cookie sheet. Bake for 25 minutes, or until golden brown. Balls should be firm to the touch.
