SPINACH-MUSHROOM CASSEROLE

Steps:
- Saute mushrooms in butter until tender. Drain spinach thoroughly, Stir together spinach and mushrooms. Stir in eggs, sour cream, nutmeg, salt and pepper. Spoon mixture into greater 1 ½ quart casserole; sprinkle with cheese. Bake in preheated 350 oven until hot, about 45 minutes. Can be assumed 3-4 hours in advance and refrigerated covered; increase baking time to 50-55 minutes.
