SPINACH-MUSHROOM CASSEROLE image

2 cups chopped mushrooms
¼ cup butter
4 packages (10 ounces each) frozen spinach thawed
4 eggs
¾ cup sour cream
1/8 teaspoon ground nutmeg
½ teaspoon salt
¼ cup grated Parmesan Cheese

Steps:

  • Saute mushrooms in butter until tender. Drain spinach thoroughly, Stir together spinach and mushrooms. Stir in eggs, sour cream, nutmeg, salt and pepper. Spoon mixture into greater 1 ½ quart casserole; sprinkle with cheese. Bake in preheated 350 oven until hot, about 45 minutes. Can be assumed 3-4 hours in advance and refrigerated covered; increase baking time to 50-55 minutes.
