SPICY SHRIMP NOODLE BOWL image

box of fettucini
25 shrimp med. sized
salt
4 T cornstarch
2 T veg oil
2 teasp grated ginger
1 cup thinly sliced carrots ( julienned)
1 cup julienned red pepper
3 shallots
1 cup lite coconut milk
1 cup chix broth
1.5 teasp thai green curry paste
2 T lime juice
1/2 cup chopped cilantro, divided
lime wedges

Steps:

  • cook fettucini season shrimp with salt and dredge in cornstarch, shaking off xs heat oil in saute pan over med-high heat until hot add shrimp in a single layer, cook 8 mins ( or less) until golden brown and crisp, turning once remove shrimp and keep warm add ginger, carrot, bell pepper, and shallots to pan.cook and stir until veggies are crisp-tender-- about 3 mins stir in coconut milk, chix broth, curry paste, lime juice, 4 Ts of cilantro, teasp salt and simmer add fettucini to sauce, cook 1 min, stir in shrimp
