Steps:
- Combine flour, cornmeal, sugar, baking powder, and salt in a mixing bowl. In a separate bowl, combine salsa, buttermilk, melted butter, and egg.
- Stir wet ingredients into dry ingredients until just moistened.
- Fill 12 greased muffin cups three-quarters full. Bake at 400 degrees for 15 - 18 minutes or until a toothpick inserted in the center comes out clean. Cool for 5 minutes in the pan before removing. Serve warm.
- The baked muffins take on the flavor of the salsa you use, so choose the salsa you like best. I always use Pace brand medium chunky salsa.
- Whole milk can be substituted for the buttermilk if you're out of buttermilk.
