SPICY PORK ROAST image

Number Of Ingredients 8

1 pork roast, around 3 pounds
1 onion, sliced
10 cloves of garlic, sliced
1 can chipotle chilies
1 can enchilada sauce
1 cup chicken broth
Cooked pinto beans
Kosher salt and pepper to taste

Steps:

  • Generously coat pork roast with salt and pepper and place in bottom of slow cooker. Saute onions and garlic in oil until softened; pour over pork roast. Add chicken broth, adobo sauce (with peppers) enchilada sauce and beans. Cook on low for 8 hours. Shred pork and serve over rice. If desired, heat oil in pan and lightly fry shredded pork for tacos.
