SPICY LENTIL BURGERS image

Yield 4-6 people

Number Of Ingredients 13

2 large onions, peeled and finely chopped
2 carrots, scraped and finely chopped
1 celery stalk, finely chopped
2 T olive oil
1 large garlic clove, crushed
8 oz green or brown lentils, cooked until tender and well drained.
1/2 t ground cumin
1/2 t ground coriander
6 T chopped parsley
1 T lemon juice
salt and freshly ground black pepper
plain flour for coating
oil for shallow frying.

Steps:

  • 1. Fry the onions, carrot and celery in the oil in a large saucepan for 10 mins until soft and lightly browned, stirring from time to time. 2. Add the garlic, lentils, cumin, coriander, parsley and lemon juice. Mash by hand or puree roughly in a food processor or blender, until the mixture holds together. Season with salt and pepper. 3. With floured hands, shape the mixture into 10-12 flat burgers, using a palette knife. Coat the burgers with flour. 4. Fry the burgers in a little oil until crisp and brownedl, turning them over carefully to fry the second side. 5. Drain on kitchen paper and serve garnished with watercress and tomato. Alternatively, serve on hamburger buns (which is what the McEwens do)
