Steps:
- Can be made ahead: Cook noodles and drain. Add 1 TBS of vegetable oil to noodles and mix. Set aside. Stir together lemon juice, soft brown sugar and soy/fish sauce. Set aside. Combine peanuts, green onions and cilantro. Divide in half and set aside. In a wok sauté garlic and olive oil taking care to not brown garlic. Stir egg into noodles. Stir fry noodles. Make well and add lemon juice mixture to center of wok. Stir in noodles. At half the peanut mixture and stir. Put on plate and sprinkle remaining peanut mixture on noodles.
