SPICY CAJUN SHRIMP OVER FRIED GREEN TOMATO image

1 small shallot, peeled
2 garlic cloves, peeled
1/8 cup red hot sauce
3/4 cup canola oil
1 tsp salt
1 pinch white pepper
1/2 cup corn flour
1/2 cup all purpose flour
2 TBSP Old Bay seasoning or cajun seasonings
1 cup buttermilk
1 green tomato (can use eggplant)
1/4 cup of your favorite tomato sauce
4 to 6 large shrimp

Steps:

  • Place shallots, garlic, hot sauce in a blender and blend until smooth. Slowly add the oil to the mixture while it is blending. Season to taste and refrigerate. Marinate shrimp is mixture for 30 minutes. Heat your grill Heat fryer oil to 350. Slice the green tomato about 1/2 inch thick. Mix the two flours and the Old Bay seasoning together Place sliced tomato in the flour mixture to completely coat it. Place the tomato in buttermilk and back into the flour mixture. Place into the fryer and cook until golden brown. Grill the shrimp until done.(approx 3 minutes each side). Take your serving plate, place your favorite tomato sauce on the bottom, place the fried green tomato on top of the sauce and top fried green tomato with the grilled shrimp.
