Spanish-Style Roasted Potatoes image

Number Of Ingredients 8

1 pound Small Yukon Gold potatoes, halved
2 tablespoons Extra-virgin olive oil
1 tablespoon Chopped fresh oregano
2 teaspoons Minced fresh rosemary
2 teaspoons Paprika
3 tablespoons Pitted Castelvetrano olives, chopped
1 tablespoon Extra-virgin olive oil
1 tablespoon Chopped fresh parsley

Steps:

  • Toss together halved potatoes, 2 Tbsp olive oil, oregano, rosemary, and paprika on a parchment-paper lined baking sheet. Bake at 400 for 25 minutes, stirring after 10 minutes. Toss with chopped olives, 1 Tbsp olive oil and fresh parsley.
