Spanish Rice with Lentils image

This is a high-fiber, low-fat meal that's perfect for vegetarians. It's also high in folic acid so it's good if you're pregnant. Oh, and it's pretty tasty too!

Number Of Ingredients 12

1 tablespoon vegetable oil
2 cloves garlic, minced
1 medium onion, chopped
1 (28 ounce) can tomatoes, broken up
1 (19 ounce) can lentils, drained and rinsed
1 cup long grain rice
1 cup water
1/2 teaspoon paprika
1/2 teaspoon ground cumin
1/2 teaspoon chili powder
1/4 teaspoon red pepper flakes
1 medium green pepper, diced

Steps:

  • Use a large saucepan to heat oil over medium heat.
  • Add garlic and onion and sauté until onion is soft.
  • Add tomatoes, lentils, rice, water and spices.
  • Bring to a boil, reduce heat, cover and simmer for 20 minutes.
  • Add water as needed, if rice starts to dry out.
  • Add green pepper and simmer uncover for three minutes or until rice is tender.
