SPANISH RICE SKILLET image

Yield 4-6 people

Number Of Ingredients 9

7 slices bacon
1 cup chopped onion
1/2 cup chopped green pepper
1 small can tomato soup
1 can Italian diced tomatoes
1 bay leaf
2 cups water
1 cup uncooked long grain white rice
3 cups cubed cooked ham

Steps:

  • In a large saute pan or electric skillet (with a lid) fry bacon; remove and drain on paper towels. Cook onion and green pepper in remaining bacon fat until golden. Add remaining ingredients. Cover tightly and cook slowly, stirring often. Add more water as necessary. Remove Bay leaf. Serve with crumbled bacon pieces on top.
