Spanish Rice (Microwave) Recipe - (4.7/5) image

Number Of Ingredients 7

1 Large Onion
1/4 Cup finely chopped green pepper
2 tbsp. butter/margarine
1 can (16 oz) stewed tomatoes, chopped and drained (reserve liquid)
1 Cup long grain rice
1-1/2 Tsp. salt
1/8 tsp. pepper

Steps:

  • In 2 quart casserole, combine onion, green pepper and butter. Cook at high 2-1/2 to 3-1/2 minutes; stir once. Add enough water to reserved liquid to equal 2 cups. Add to dish with tomatoes, rice ,salt and peppers. Cook covered with lid at high 4 to 5 minutes and then at medium low for 16 to 17 minutes. Let stand covered 5 minutes.
