This dish is packed with flavor!! It can be made low calorie by using Margarine and artificial sweetener or hotter by adding more Ancho Chili. I cooked this in a wok! Whatever your heart desires!

Steps:
- 1. Melt butter in a large fry pan and brown the pork
- 2. Push pork to one side, add onion and garlic Saute' until tender
- 3. Mix onion and pork together
- 4. Add the can of tomatoes, water, celery, bell pepper, ancho chili, salt and pepper
- 5. Stir, cover and simmer 45 minutes or until pork is tender
- 6. Before serving stir in 2 Tbls sugar or more to taste
- 7. Thicken with Cornstarch to your liking
- 8. Serve over rice
