Spaghetti with Pecorino and Pepper image

Number Of Ingredients 5

salt
1 pound spaghetti or linguine
2 tablespoons extra-virgin olive oil
1 tablespoon coarsely ground black pepper
1 cup freshly grated Pecorino Romano cheese

Steps:

  • 1 Bring at least 4 quarts of water to a boil in a large pot. Add 2 tablespoons of salt, then the pasta, gently pushing it down until the pasta is completely covered with water. Stir well. Cook over high heat, stirring frequently, until the pasta is al dente, tender but still firm to the bite. Drain the pasta, reserving some of the cooking water. 2 In a large serving bowl, toss the pasta with the oil, pepper, half of the cheese, and a little of the cooking water until the cheese is melted.
