Yield 4 people

Number Of Ingredients 12

1 small spaghetti squash, cooked
2 tablespoons olive oil or butter
1/2 cup minced onion
1 package minced mushrooms (buy sliced mushrooms and dice in food processor)
2 green onions, finely chopped
12 ounces cooked chicken (2 whole breasts) or turkey meat
2 cups crushed tomatoes
1/4 cup dry red wine
2 teaspoons capers
2 1/2 teaspoons fresh chopped oregano
1 teaspoon black pepper
3 tablespoons Italian parsley, finely chopped

  • Prepare Spaghetti Squash- Preheat oven to 375F. Pierce uncut squash several times with meat fork, and bake on baking sheet 1 hour, or until tender. Let cool for 20 minutes. Halve, remove seeds and scrape strands. Once squash has been in oven for 30 minutes, heat the oil/butter in a skillet over medium high heat, saute onion, mushrooms and green onions for 4 minutes. Add the chicken or turkey and cook for about 3-4 minutes. Stir in tomatoes and wine and bring to a boil, then lower heat and simmer for about 20 minutes.
