Southwestern Soup image

I just love a bold, full of flavor, hearty soup... straight from my kitchen to yours. I know the giardiniera is a little off the wall , but trust me it works great in this soup! Try it, you'll like it as much as my family and I do :)

Number Of Ingredients 20

1 tablespoon(s) olive oil
1 medium onion, diced
1 - jalapeno, diced
3 tablespoon(s) mexican oregano
2 pound(s) ground beef
1 teaspoon(s) onion powder
1/4 teaspoon(s) garlic powder
1 teaspoon(s) kosher salt
1/2 teaspoon(s) black pepper
4 cup(s) water
4 teaspoon(s) tomato bouillon with chicken flavor
1 bunch(es) cilantro, chopped fine
1 small can(s) mexican style corn
1 can(s) fire roasted diced tomatoes
1 can(s) black beans
1/2 package(s) taco seasoning
1 jar(s) giardiniera (regular or hot)
1 jar(s) favorite salsa (i use a local medium heat one)
TOPPINGS
- diced onion, cilantro, shredded mexican blend cheese, sour cream

Steps:

  • Saute onion, jalapeno and mexican oregano in olive oil until onion and pepper are translucent. Remove from pan and set aside.
  • brown ground beef, onion powder, garlic powder, salt and pepper, crumble and drain.
  • mix water with tomato bouillon and heat in microwave or on stove top until luke warm. Pour over browned meat
  • add onion/jalapeno, half of the cilantro (other half use for topping), mexican style corn, fire roasted diced tomatoes, black beans, taco seasoning and favorite salsa
  • drain giardiniera and chop all veggies smaller and add to soup
  • simmer soup in crock pot or stove top for 1 hour. Top with toppings of choice and enjoy ;)
