Southwestern Onion Rings image

2 units sweet onion
2.5 cups buttermilk
2 units eggs
3 tablespoons water
1.75 cups flour
2 teaspoons salt
2 teaspoons chili powder
1 teaspoons cayenne pepper
1 teaspoons sugar
1 teaspoons garlic powder
1 teaspoons ground cumin
1 units oil

Steps:

  • Cut onions into 1/4 inch slices; separate into rings. Place in a bowl with buttermilk and soak for 30 minutes, stirring twice.
  • In another bowl, beat eggs and water. In a shallow dish, combine the flour, salt, chili powder, cayenne, sugar, garlic powder, and cumin. Drain onion rings, dip in egg mixture, and then coat with flour mixture.
  • Heat oil to 375°F and fry in batches for 1-2 minutes on each side.
