Quick, cheap, and easy to make. This can be made vegetarian (vegetable stock) or with chicken stock.

1 cup rice
butter
1 tomatoes
1 zucchini
1 teaspoon salt
1/2 cup chicken stock or 1/2 cup vegetable stock

Steps:

  • Sauté rice in butter.
  • Add chopped tomato and zucchini and cook for a few minutes.
  • Add chicken (or vegetable stock) and salt.
  • Bring to a boil.
  • Cover and let simmer until liquid is absorbed.
