Steps:
- Mix warm water, yeast, and 1 Tbsp. sugar in a bowl and let sit for 5 min. Meanwhile beat eggs, mix with 1/2 cup sugar and butter. Add 1 cup flour and 2 tsp salt, mix well. Add the yeast mixture and mix. Add flour 1 cup at a time until you reach a soft, not sticky dough ball (about 4 cups). Coat a small amount of olive oil on dough and let rise for 1 hour.
- After, divide dough into 2 and roll out each section into a circle about 1/8 inch thick, spread butter all over top and cut with pizza cutter into 12 slices. Roll from the outside in to look like crescents. Repeat with each 1/2 of dough. Spray cookie sheet with cooking spray and place 12 rolls on each sheet. Cover with plastic and let rise for about 4 hours (can do 1 hour, but they don't get as fluffy).
- Preheat oven to 350 degrees F and bake for 15 minutes each sheet or until golden brown on top.
