Smothered Zucchini and Onions image

This recipe reminds me of smother potatoes and tastes like it too. We like it as a quick summer side dish and the kids enjoy it.

Number Of Ingredients 7

1 Large slice(s) onion
2 Large slice(s) zucchini
3 clove(s) garlic
4 tablespoon(s) unsalted real butter
1/4 cup(s) olive oil
Several pinch(es) mrs. dash garlic & herb seasoning mix
1/4 cup(s) low sodium chicken broth

Steps:

  • I like to use my wok or a big skillet for this recipe.
  • Slice the zucchini and onion into coins. Mince the garlic then toss everything together with a little olive oil and season with pepper and Mrs. Dash Garlic and Herb seasoning mix.
  • Add olive oil and butter to saute pan, when melted saute vegetables over medium to high heat until they are brown. Add chicken broth and cover until your desired tenderness.
