Steps:
- Season chicken with salt and pepper. Roll in flour. Heat oil in skillet and brown chicken. Transfer to a plate. Pour all but about 3 T. of oil out of pan. Add onion flakes and garlic powder then about 3 T of flour. Gradually add the broth and bring to a simmer. Put chicken back in the skillet. Reduce heat to low, cover and simmer, stirring occasionally until chicken is cooked through and shows no sign of pink (about 35 minutes). Transfer chicken to a platter and cover to keep warm. Bring sauce to a boil over high heat and cook, stirring often, until thickened (about 5 minutes). Season gravy with salt and pepper and pour over chicken. Serve hot over mashed potatoes.
