Smoked Summer Sausage Pasta Salad image

If you ever get a chance to smoke a log of summer sausage, it is off the hook good. I created this salad to use up leftover summer sausage, and it's really a meal in itself! You could use any cooked sausage or even bacon instead.

Number Of Ingredients 8

4 cup(s) cooked pasta
2 cup(s) smoked summer sausage, cubed
1 - red bell pepper, roasted
1 - poblano pepper, roasted
1/2 cup(s) diced onion
1 1/2 cup(s) grated cheddar, 2%
1/2 teaspoon(s) black pepper
1 cup(s) sour cream, lite

Steps:

  • Cut red bell and pablano in half, remove stems and seeds. Place on baking sheet and broil for 5-7 min. till charring begins. Remove, cool, and dice. Dice onion, and grate cheese. Cube summer sausage, or any other sausage into small bite size pieces.
  • Place all ingredients in a large bowl, add black pepper and sour cream. Mix to combine. Refrigerate until serving.
