Smoked Sausage Casserole image

I saw a recipe for Amish Ham Casserole. I didnt have Ham and wanted to make it so I used smoked sausage instead. I also added some other items I had on hand and Smoked Sausage Casserole was born...

Number Of Ingredients 12

4 c hash brown potatoes, frozen
1 medium onion, diced
1 small bell pepper
1 can(s) corn
1 c minute rice (cooked according to package)
6 large eggs
1/2 pkg smoked sausage sliced then quartered
1 c shredded mozzarella
1 1/2 c small curd cottage cheese
1 Tbsp dried parsley
cayenne pepper (to taste)
1/2 c frenchs onion crumbled

Steps:

  • 1. Preheat oven to 375.
  • 2. In a large bowl mix thawed hash browns, diced onion, diced peppers, cooked rice, corn, mozzarella, cayenne, dried parsley.
  • 3. Add eggs and cottage cheese and mix everything well.
  • 4. Pour into a greased 13x9 baking dish. I sprinkled the Frenchs Onions on top but you can leave that out.
  • 5. Bake uncovered for about 45 mins to an hour or until its set and the top is bubbly.
  • 6. Let stand for about 15 mins before cutting.
