SMOKED PAPRIKA CHICKEN STEW image

1 Tbsp. olive oil
1 red onion, chopped
2 red bell peppers, chopped
2 cloves minced garlic
1 cup sliced fresh button mushrooms
1 lb. boneless, skinless, chicken breasts cut into 1 in. cubes
2 Tbsp. smoked sweet paprika, divided
1 can (14.5 oz.) diced tomatoes undrained
1 can (15oz.) rinsed and drained cannelloni beans
1 can (14.5 oz.) low sodium chicken broth
2 tsp. dried oregano leaves
Salt & pepper to taste

Steps:

  • 1. Heat olive oil over med heat 2. Add onion, peppers, and garlic and cook stirring freq. 3 min. 3. Add mushrooms & cook stirring freq. 2 min. 4. Add chicken and sprinkle with 1tbsp. Paprika 5. Cook stirring freq. 3 min. 6. Stir in remaining paprika cook 1 min., stirring freq. 7. Add tomatoes, beans, broth, oregano, salt and pepper, stir well and heat til boiling 8. Reduce heat and simmer, stirring occasionally, 10-15 min or until chicken is cooked and veg. tender.
