I've completely flunked at being an "Empty Nester". I still cook as if the entire dorm is coming for the weekend. This recipe is perfect for one or two. It makes 15-18 medium-sized cookies. Just enough to satisfy that peanut butter craving. These turn out perfectly every time- soft, thick and just a little chewy. =)

Steps:
- 1. Preheat oven to 350 degrees. Line a cookie sheet with parchment paper.
- 2. Cream peanut butter and butter together with hand mixer. Add brown sugar and white sugar. Mix for two minutes at medium speed.
- 3. Add salt, baking soda, baking powder, vanilla and egg yolk. Mix until blended.
- 4. Add flour, 1/4 cup at a time, until uniform in color. Roll into 1 1/2" balls and place on prepared cookie sheet. (You can roll in sugar, if you wish. I just sprinkle them when they come out of the oven.) Flatten very slightly with the bottom of a glass dipped in sugar. You want them a little thicker.
- 5. Bake at 350 degrees for 7-8 minutes. Watch closely as all ovens are different. When done, sprinkle with sugar, if desired, while hot. Cool slightly before removing from baking sheet.
