Steps:
- Stir together brown sugar, salt, cumin, and black pepper in small bowl.
- Rub brisket with sugar mixture.
- Put brisket in 6-quart slow cooker. Add smashed garlic and minced chipotles on top.
- Cover and cook until tender. At least 5 hours on high or 10 hours on low. My preference is to cook on high for one hour and on low for 9 hours.
- Transfer brisket to cutting board, reserving 1/2 cup cooking liquid. Slice brisket against the grain. Place in large bowl and use 2 forks to shred the slices. Add reserved liquid and stir until meat is coated.
- Add brisket to buns. Top with your favorite BBQ sauce and pickles and cover with bun tops.
